As receitas saíram da cabeça de Enrique Paredes, chef famoso por comandar o Barrakhuda, em Lima. Uma das opções mais pedidas é o quinoto a la cuancaina, um risoto de quinoa que chega à mesa com creme de queijo e camarões flambados. O arroz tailandês, por sua vez, é abacaxis grelhados, castanha, leite de coco e camarões.
E se você não perde a oportunidade de apreciar um bom ceviche, experimente o trío. Além do clássico, com pesca do dia marinada em leite de tigre, são servidos ceviches de camarão e de polvo.
Fora do mar, há os patacones, que são discos de banana-da-terra fritos e cobertos por lagarto desfiado e creme de mandioca.
