New in São Paulo, the HOW arrived here in March 2024 and surprised everyone with its delicious Goiás cuisine. With real “affective food”, the menu presents the essence of the local cuisine of the Midwest, where the family of chef and owner Paloma Zaragoza was born. That’s why every recipe is a return to his roots.
The restaurant serves delicacies, à la carte dishes, regional delights and family recipes. So it’s a great choice for those who want to expand their experiences even further at São Paulo, the most gastronomic city in Latin America.
Stars of the house
The highlights of the menu are three options: The ‘Chica Doida’ is an oven-baked pamonha gratin with house-made 3-meat sausage. In fact, COMO produces all the sausages there. The recipe is more than 70 years old in the city where it was created and today it can be tasted by people from São Paulo, even without leaving the capital. In 2022, it received the title of cultural and intangible heritage of the city of Quirinópolis, in Goiás.
Moving on to the ‘Empadão Goiano’, the dish, which is a delicious creamy chicken pie, can be ordered at any time of the day. In addition to the main ingredient, the delicacy comes with chicken sausage, potatoes, semi-cured cheese and peas, corn and fresh hearts of palm.
The ‘Panelinha Goiana’ embraces the more traditional concept of the house. The dish is so popular that every bar and restaurant has its own. So, at COMO SP, it comes with arroz bomba spiked with cachaça, vegetables, carne de sol, chicken sausage, fresh green beans and cabbage chips. You can also find it in a vegetarian version.
To round off our suggestions, try the ‘Comoção’ , a caipirinha made with pitanga, cashew honey from Ceará and basil. The house also serves delicacies such as pastelim de Goyaz and ciroulo red cornmeal cake.

COMO is located at Rua Coropé, 67 – Pinheiros. The second floor of the establishment is a lovely surprise: a charming terrace overlooking the Tomie Ohtake Institute.
Soon, there will be a schedule of events, dinners and pairings with exclusive products from Goiás. The restaurant will open its doors for small and medium-sized producers to present Goiás cheeses, wines, chocolates and handicrafts to the public.
