Can you imagine tasting fresh nigiri straight from the counter, standing up, as if you were in Tokyo? That’s the proposal at the recently opened Standing Sushi Bar in Pinheiros.
A pioneer in Brazil in the tachigui concept – a term used to describe traditional sushi bars where people eat standing up – the restaurant is committed to a casual, agile and intimate format, without sacrificing excellence in Japanese cuisine.

Opened in a discreet and charming building in Pinheiros, Standing Sushi Bar was the brainchild of Bruno Erlinger, who fell in love with the model during a stay in Japan.
With a relaxed atmosphere and a counter with 14 standing seats, the place offers a different experience on every visit. That’s because customers assemble their own sequence of dishes using the freshest ingredients of the day.
At the counter, which serves as the restaurant’s VIP area, you can order exclusive sushi and hand rolls, such as bluefin toro or salmon roe.
The menu, designed by chef Lucas Regis, values both Brazilian ingredients – with fish from our coast – and imported cuts, such as bluefin tuna.

Among the highlights are:
- Nigiris
- Tirashi with uni, ikura and scallops
- Onigiris and Donburis such as Unagi
- Hot cuisine with dishes such as Magret Tataki and Mushroom Plate
- Gyozas, Karaage and Gyu Sando with kimchi and kewpie mayonnaise
In addition, the restaurant uses locally caught fish that is matured in-house – a practice that enhances flavor, texture and guarantees freshness.
Finally, on the drinks menu, a careful selection of sakes, wines, beers and signature cocktails guarantees pairings that match the menu.
